The Defined Dish set the tone with this cake pop recipe. All credit (yet again) to my friend Linden for bringing these into my life. I’ve modified below for more protein, same deliciousness.

These protein bites can start a habit—in the best way. Nutter butters, added protein, all the makings for truly healthy snacking! You’ll be making a second batch before you know it. Cake pop energy. Protein bite logic. No regrets. For you, your family, your friends & loved ones; no one will even suspect they’re glucose-friendly.

INGREDIENTS

  • 1 cup smooth cashew butter
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • ¼ teaspoon almond extract
  • 1/3 cup almond flour
  • 1/3 cup vanilla protein powder
  • (Optional) drizzle or coating: ½ cup white chocolate chips, red or pink food coloring, like elderberry extract, white sprinkles

DIRECTIONS

  1. Prepare a small baking sheet or plate with parchment paper. Set aside.
  2. In a large bowl, mix all the ingredients with a spoon until combined. It will look and feel slightly loose and tacky, but still dough-like. 
  3. Take ~1 tablespoon of the mixture at a time (the size of a cake pop) and roll into individual balls -OR- roll out the mixture in between parchment paper, to use cookie cutouts. Place the balls or the cutout shapes onto the lined baking sheet or plate. Place in the freezer to allow them to set while you melt your chocolate topping.
  4. In a separate medium bowl, add the white chocolate chips (and a dash of coconut oil if you prefer, but it’s not necessary). Microwave in 20 second increments, stirring in-between, until the chips are melted and smooth. Add a few drops of red or pink food coloring and stir to combine.
  5. Coat or drizzle the bites with your melted chocolate, and add sprinkles for that iconic cake pop finish!
  6. Place into fridge and chill for at least one hour for the chocolate to harden. Store covered, in your fridge or freezer.
