Having a high protein, homemade, no-bake snack recipe in your back pocket is a super power. This lemon protein bar recipe came from Gentle Tummy and my only modifications are the shapes and drizzle technique (optional), which range from cookie punch out shapes, loosely cut square sections, etc. Whatever you’re feeling, go for it!

INGREDIENTS

  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1/3 cup cashew butter
  • 1/4 cup maple syrup
  • 2 tablespoons ground flax seed
  • 1 teaspoon coconut oil (melted or liquid)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice (plus more for desired dough consistency)
  • Topping: 2-3 tablespoons white chocolate chips, melted for drizzle, or 1/4 cup for total coating (optional)

DIRECTIONS

  1. Add all ingredients to a medium/large bowl: 1/2 cup oat flour, 1/2 cup vanilla protein powder, 1/3 cup cashew butter, 1/4 cup maple syrup, 2 tablespoons ground flax seed, 1 teaspoon coconut oil, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Juice and zest one lemon, measuring out 2 tablespoons of juice (remove seeds) and 1 tablespoon of zest. Mix until well blended.

  2. Check the texture by rolling a small amount of dough into a ball. It should hold together without sticking to your fingers. Add an additional dash or squeeze of lemon juice if the dough is too thick. Add a light sprinkle of more oat flour if the dough is too sticky.

  3. Once you're happy with the dough consistency, roll out two pieces of parchment paper (one for the top and one for the bottom of the dough). Roll out the dough in between the sheets of parchment paper - either with a rolling pin, or use your hands to press flat, evenly. Gently release both sides of parchment paper (helps precent sticking). Place in the freezer for about 10 minutes to firm up before adding the topping.

  4. In a microwave-safe bowl, melt 2-3 tablespoons white chocolate chips (or much if you are fully coating these). Microwave in 30-second increments, stirring between each, until completely melted and smooth.

  5. Take the dough out of the freezer, and cut into desired shapes (bars, squares, circle cut outs, stars, whatever). I like to keep them bite-sized. Drizzle the white chocolate over the chilled bars, still on parchment paper. Transfer to a storage container (avoiding stacking them until the chocolate is completely set) and keep these in the refrigerator until ready to enjoy.
