Having a high protein, homemade, no-bake snack recipe in your back pocket is a super power. This lemon protein bar recipe came from Gentle Tummy and my only modifications are the shapes and drizzle technique. Whatever you’re feeling, go for it!

INGREDIENTS

  • 1/2 cup oat flour

  • 1/2 cup vanilla protein powder

  • 1/3 cup cashew butter

  • 1/4 cup maple syrup

  • 2 tablespoons ground flax seed

  • 1 teaspoon coconut oil (melted or liquid)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • Zest of 1 lemon

  • Juice of 1/2 lemon (plus more for desired dough consistency)

  • Topping: 1/4 bag of white chocolate chips, melted for a drizzle, or 1/2 bag melted for complete coating (optional, they’re good sans chocolate, too!)

DIRECTIONS

  1. Add all ingredients to a medium/large bowl. Mix until smooth and combined.

  2. Check the dough’s texture by rolling a small amount of dough into a ball in your hand and taste test (yum). Add a dash of lemon juice if it’s too thick. Add a pinch more oat flour if it’s too sticky.

  3. Divide and shape the dough into even shapes using small silicone molds, or roll out between two sheets of parchment and cut evenly into squares, or divide and roll into bite sized balls. These work in quite literally ANY shape. Place in freezer to let them set while you prep the chocolate.

  4. Melt the white chocolate in a microwave safe bowl, stirring thoroughly every ~30 seconds, until smooth. Optional to transfer some or all to a small piping bag for easy drizzling.

  5. Take the dough out of the freezer. Apply the melted white chocolate how you prefer: drizzle, dunk, pipe, spread, etc. (there’s no wrong way). Garnish with a bit more lemon zest.

  6. Freeze or refrigerate until chocolate is set and enjoy! Store covered and refrigerated.
